Nicolas Gill (born 24 April 1972 in Montreal, Quebec) is a Canadian judoka who competed at four consecutive Olympic Games. He is a two-time Olympic medalist, receiving a bronze in the middleweight (86 kg) division at his inaugural Olympiad in Barcelona. He received a silver medal in the men's half-heavyweight (100 kg) division at the 2000 Sydney Summer Olympics.
Gill was honored by his teammates as Canada's flag bearer in the opening ceremony at the 2004 Summer Olympics in Athens.[4] A mild controversy developed after it was revealed that Gill had made comments in favour of Quebec separatism, and had voted 'yes' in the 1995 Quebec referendum.[5][6] Gill went on the lose his opening match which eliminated him from the tournament.
In 2007, he received the prix reconnaissance from UQAM[7] as a TÉLUQ student.[3]
He has since become a coach; one of his athletes, Antoine Valois-Fortier, won a bronze medal at the 2012 London Summer Olympics.[8]

He was born in Columbus, Ohio, and now lives between Pound Ridge, New York and Lima, Peru. He co-wrote the books Central (2016) and The Latin American Cookbook (2021) with Peruvian chef Virgilio Martinez, as well as Slippurinn: Recipes and Stories from Iceland (2021), with Icelandic chef Gísli Matthías Auðunsson. All are published by Phaidon.
In early 2016, he co-founded a website dedicated to the food and places in the Americas, New Worlder. In 2021, it added a podcast and in 2022 it became a Substack newsletter.

Gill was born on March 21, 1837 and brought up in 164 Grand Street in New York City for most of his life. This area of the city was country-like at the time and exposed Gill to an area with trees and open fields. His frequent visits to the Fulton Fish Market and the port of New York helped spark his interest in ichthyology. Though his father wanted him to become a clergyman, as a position of a naturalist was considered an unstable job, Gill could not shake his passion for water and the fish it contained.
